21 June 2009 - We have a bumper crop of strawberries this year. Mary will be making "Strawberries in Paris" for the lucky guests visiting in the next few weeks. First she puts a layer of strawberry puree in a stemmed goblet, then a layer of vanilla bean custard, and finally some of these luscious strawberries. Yesterday she picked a fresh batch and made Strawberry Sorbet so that guests later in the summer can enjoy the wonderful taste of these berries.

WHAT'S NEW AT EMERALD LAKES:
As a result of writing about genetically modified foods, Mary has started to mill the flour used in her breads and baked good from organic wheat and organic corn. You would not believe how delicious freshly milled organic cornmeal tastes compared to that which you buy at the grocery store. You can look forward to whole wheat crepes, bread, waffles, and other baked goods. She will soon be trying a recipe for polenta.

Guests can fly into the Spokane, Washington, U.S.A. airport (a 3 1/2 hour drive to Nelson) or into the Castlegar, B.C. airport (a 40 minute drive from us). A perfect place to stop for those driving between Vancouver and Calgary as we are halfway between the two cities.

At Emerald Lakes there are four lovely rooms from which you can choose:

Our two poolside luxury rooms are spacious with elegant baths and have French doors that open onto the pool atrium. The Mandarin Room has a large seating area not shown in the picture and the Emerald Room has a wonderful view of the lake and gardens. In addition to the king bed, the Emerald Room has a single bed and the Mandarin Room has two single beds. The Lotus Room has a private bath and overlooks the garden with a gorgeous view of the lake. The room is decorated in fine Oriental art and has an additional single bed as well as the queen bed.

WEATHER INSURANCE
Have you ever had a vacation ruined because the weather was bad? At Emerald Lakes, a fine Nelson Bed and Breakfast, the weather doesn't matter! If nature is uncooperative, then stay in and enjoy our beautiful pool atrium, the warmth of the sauna, or have a leisurely bath with lots of bubbles in one of our three two-person jetted tubs (shown below). There are plenty of books to read, a very large video collection, or you can practice your piano and/or singing skills with our "karaoke" system. Tea, coffee, hot chocolate, and cookies are available all day long. We can arrange for a massage in your room or in Nelson.
Our two luxury rooms, the Emerald Room and the Mandarin Room open onto the swimming pool. Sit by the window in the warmth of the vaulted pool atrium with a cup of hot chocolate as you watch the ducks and geese glide along the lake.

Mary is sure you have noticed already, but we REALLY love the four seasons at this Nelson B and B. Art, menus, china, place settings, and seasonal decorations are rotated with the seasons.
WHERE ARE WE?
We are in southeast British Columbia, Canada exactly half-way between Vancouver and Calgary, and just 50 kilometers (about 30 miles) north of the U.S. border. There are daily flights from Vancouver and Calgary into Castlegar Airport (a one hour flight) and we are a 40 minute drive from the airport. Those people coming from the U.S. may want to fly into Spokane, Washington. Nelson is a 3 hour drive north from the Spokane Airport.
